The Campus Kitchen Food Trailer

The Campus Kitchen Food Trailer project, funded entirely by a grant, built us our first kitchen that is completely our own. The main goal of the mobile food unit is to provide free hot meals to community members experiencing food insecurity.

CK staff and shift leaders are also able to utilize the space throughout our regular operations. Check out the below updates to read more about where the Food Trailer has been and where it will go!

Corn Salad at the Marigold Market!

April 9, 2022

Campus Kitchen was invited to serve food at the first Marigold Market of 2022 in Winterville, Georgia. The Marigold Market connects Winterville and East Athens communities with fresh, local, and affordable food and artisan goods. On the menu was fresh corn salad made with corn off the cob, tomatoes, onions, cucumbers, and an oil-based dressing. To top of this delicious concoction, feta cheese was sprinkled on top. 

Despite the cold, many community members bundled up to browse the various veggies, baked goods, flowers, and crafts that the market had to offer. Like Campus Kitchen, many of the other vendors present were giving out free samples of their foods. The Campus Kitchen corn salad seemed to be a hit! While enjoying their free sample, people had the chance to learn a little bit about Campus Kitchen and ask questions about our food distribution process. We couldn’t have asked for a better turn out!

Serving Lunch to LEAD Athens at the ACCA!

To kick off our very first event in the food truck, we were invited over to the Athens Community Council on Aging to make lunch for LEAD Athens. Using the excess chicken donated by our local grocery store partners and eggs donated from a local farmer, we prepared some egg salad and chicken salad sandwiches. Additionally, we plated up potato chips and a fresh salad from produce grown right down the road at UGArden with a delicious homemade dressing. If that wasn’t enough, you could also wash it all down with some freshly made tea!

In traditional Campus Kitchen style, all the main pieces of the event’s menu would have likely gone to waste if they weren’t donated to us in order to be able to re-purpose them into our weekly operations. After chatting some with the members of LEAD Athens about the purpose of the truck and who we are, they lined right up and actually got to walk through the inside of the trailer to prepare their plates, buffet-style!
